The asparagus season is quite short: from April to the end of June. So, we take the opportunity to enjoy them in all forms! Here is an easy and quick recipe for asparagus soup made with a food processor.
Peel and slice the onion. Wash the asparagus and cut them into pieces.
Place the onion and asparagus in the bowl of the food processor, blend for 5 seconds on speed 5.
Add water, then blend again for 5 seconds on speed 5.
Add the vegetable broth cube. Season with salt and pepper, and set for 18 minutes at 100°C, speed 1.
To finish, just before serving, add the cream and blend for 1 minute at speed 10. Serve.
