An apple, nut, and chocolate tart with autumn fruits that blend their flavors well and are enhanced by a delicious chocolate shell. A delightful and seasonal tart.

For the garnish
 150 walnut halves
 2 apples
 200 dark chocolate
 80 maple sugar
 1 maple syrup
 80 sour cream

For the homemade shortcrust pastry
 200 flour
 100 butter
 5 water
 1 egg
 1 pinch salt

Shortcrust Pastry In a mixing bowl, combine the flour, a pinch of salt, and the egg. Work the flour and butter with your fingertips. Incorporate the water and knead well until a ball forms. Wrap it in plastic wrap and let it rest for about 30 minutes. Filling • Blend half of the walnut halves and chop the remaining ones. • Peel and dice the apples. • In a pan, melt 20 g of butter with 1 tablespoon of maple syrup. • Add the diced apples, sprinkle them with 1 tablespoon of maple sugar, and sauté for 5 minutes over high heat until golden. • Stir in the chopped walnuts. • In a bowl, mix the thick cream and 80 g of maple sugar until the mixture lightens in color. • Add the eggs and the blended walnut halves in powder. • Preheat the oven to 200°C.

To finish Assembly Roll out the dough. Line a 22 cm diameter tart pan with it. Prick the bottom of the tart with a fork. Distribute the cubes of apples on the bottom, then drizzle them with the maple sugar walnut cream. Bake for about 25 minutes. Allow the tart to cool once baked. Melt the chocolate in a double boiler with 20 g of butter. Coat the cooled tart with chocolate and decorate with walnut halves. Enjoy.
