Discover this recipe for apple and nut mendiants. A very simple recipe to use stale bread and avoid food waste.
Preparation of the ingredients: Let the raisins soak in a little boiling water and preheat the oven to 140°C (thermostat 5). Cut the bread into small pieces and pour the boiling milk over it. You can add more milk if needed. Let the bread swell for a few minutes and then mash into a puree.
Separate the whites from the yolks. Beat the yolks and pour over the bread. Then add the sugar and mix well. Finally, add the nuts, drained raisins, and peeled apples cut into thin slices. Mix.
Preparation of egg whites: Beat the egg whites until stiff with a pinch of salt and gently fold into the previous mixture.
Cooking Pour the mixture into a large buttered baking dish and place small knobs of butter on top. Bake for about 50 minutes. Let it cool, and just before serving, sprinkle with powdered sugar.
