Very good pie with a slight almond flavor and easy to make. It can be served with a small salad of fresh fruits.
Preheat the oven to 200°C.
For the almond cream: Melt the butter and let it cool.
In a mixing bowl, combine the almond flour with the sugar. Then add the butter. Mix well.
Add the 2 whole eggs and the cornstarch. Mix until you achieve a creamy consistency.
For assembling: Place the shortcrust pastry in a tart pan and prick it with a fork.
Spread half of the almond cream.
Place the pitted and washed cherries.
Return the remaining almond cream.
Bake in the oven at 200°C for 40 minutes. Let cool and enjoy.
