Preheat the oven to 220°C (200°C for fan-assisted). Take the butter out of the fridge. Wash and cut the potatoes into 1½ cm thick wedges. Chop the garlic. Slice the onion into half moons and the cheese into thin slices.
On a baking tray lined with parchment paper, mix the potatoes with 2 teaspoons of paprika per person and a drizzle of olive oil. Season with salt and pepper. Place the bacon next to it. Bake everything for 8-10 minutes. Remove the baking tray from the oven and set aside the slices of bacon.
Stir the potatoes and bake them for an additional 10-16 minutes, or until they are golden brown.
Sauté the butter and onion for 3-5 minutes in a pan over medium-high heat. Deglaze with ½ teaspoon of white balsamic vinegar (or rice vinegar) per person. Cover and let simmer for 3-5 minutes over low heat, stirring often. Set aside off the heat. In a bowl, mix the honey, a splash of balsamic vinegar, mayonnaise, and 1 teaspoon of mustard per person. Add half of the garlic along with a pinch of paprika, if you have any left. Season with salt and pepper and mix.
Cut the burger buns in half. Spread a little butter on each side. Bake them for 4-6 minutes, buttered side down. In a bowl, mix ½ teaspoon of mustard per person with a drizzle of olive oil and balsamic vinegar. Season with salt and pepper. Just before serving, add the arugula and mix.
In another bowl, mix the ground beef, the remaining garlic, salt, and pepper. Using your hands, shape the meat into burger patties (one per person) about 1.5-2 cm thick. Sear them with a drizzle of olive oil for 2-3 minutes on each side in the pan used for the onions over medium-high heat. Place the slices of cheese on each patty. Add 1 tablespoon of water next to the meat and cover immediately. Turn off the heat and wait for the cheese to melt before serving.
Finally, spread some honey mustard sauce on both sides of the bread. Place the onion compote on top. Then add a steak covered with cheese and the grilled bacon, and close the burger. Serve the salad, the burger, and the potatoes on the plates, and present any remaining sauce on the side, if there is any.
