Craving a refreshing dessert that is also easy to make and quick to prepare? Let me introduce you to Eton Mess! This English dessert is a variant of the famous Pavlova, but served in glasses and deconstructed.
Cut the strawberries in half or into quarters depending on their size. Marinate them with a little strawberry syrup.
Whip your very cold cream into stiff peaks while incorporating vanilla sugar. A tip for achieving a well-whipped cream: rub an ice cube inside the mixing bowl just before pouring in the cream. You can also add a bit of mascarpone cream to achieve a firmer whipped cream.
Crumble the meringues into fairly large pieces.
To finish, place a layer of meringues at the bottom of the glasses. Add the strawberries on top, then cover with whipped cream. Repeat the process once. Decorate the cups with strawberries and, if you like, a mint leaf for a touch of color, or like me, keep the stems of the strawberries for the final decoration.
