Quesadillas are a Tex-Mex specialty originating from Mexico and Central America. They are made with a flatbread filled with melting cheese, often cheddar. Enjoy them as an appetizer or a starter. You can add small pieces of vegetables (tomatoes, bell peppers...) to vary the flavors.
Peel and finely slice the onion. Cook it in a little olive oil. Set aside.
Cut the cheese into small cubes.
Place a tortilla in a pan without any fat. Arrange pieces of cheese and sliced onion on top.
To finish, fold the tortilla in half and brown it for about 1 minute on each side. The tortilla is ready when the cheese has melted.
