A marriage of pumpkin-spices and a touch of honey, fit for the taste buds, with this sweet-salty soup that will warm all your guests. A recipe suggested by a bio market.
Blend your spice mixture, adjusting the quantities according to the desired flavor.
Cut the squash in half and then into slices. Peel it and remove the seeds.
Cut the squash into cubes and place them in a large pot or kettle. Cover with water and let cook over low heat for at least 30 minutes.
Meanwhile, peel and slice the onion. In a pan, lightly sauté it with a drizzle of olive oil. Sprinkle with your spice mix.
Once your pumpkin is cooked, blend it with some of its cooking broth and the spiced onion. Adjust the amount of broth according to the desired texture.
Serve the soup by adding a drizzle of walnut oil and a teaspoon of honey.
To finish, you can add toppings of your choice: gingerbread crumbs, seed mix, crushed nuts, etc...
