Here is a cake where the plums bring a moistness and a sweet flavor to the cake. In fact, adding whole fruits to a cake batter adds a very pleasant moistness due to the juice from the fruits that soak into the batter during baking. Delicious for snack time but also for breakfast.

Ingredients
 3 Eggs
 120 Fresh goat cheese in a serving dish
 120 Brown sugar
 1 Vanilla bean
 400 Pitted prunes
 250 Flour
 1 baking powder

Preheat your oven to 180°C. Wash and pit the plums. Using a small knife, split the vanilla pod. Scrape out the inside to collect the small black seeds. Add these to the plums. Mix and set aside.

Melt the butter and set aside. Grease or line a loaf pan with parchment paper.

In a mixing bowl, beat the eggs and sugar until slightly pale. Gently fold in the cooled butter. Add the fresh goat cheese. Mix. Incorporate the sifted dry ingredients (flour, baking powder). Mix until you obtain a smooth mixture. Fold in the pitted plums.

Finally, pour everything into the mold. Bake for 50 minutes in the oven. Check the doneness by inserting the blade of a knife. Unmold and let cool on a wire rack.
