Discover this pineapple cake recipe. This simple variation of the pound cake is absolutely not dry, making it a real delight for an afternoon snack.

 160 Sugar
 3 Egg
 160 Flour
 1 Vanilla sugar
 1 Baking powder
 150 Butter
 1 Pineapple in syrup
 1 Rum (optional)
 2 Icing sugar
 2 Grated coconut

Preheat the oven to 200°C.

Preparation of the dough Mix the eggs and sugar in a bowl. Add the flour, baking powder, rum, and vanilla sugar.

Melt the butter in the microwave and incorporate it.

Add the topping Add the diced pineapple slices and 4 tablespoons of syrup. Keep the remaining syrup.

Cooking: Bake for 40 minutes in a flexible mold.

Preparation of the cream: Once out of the oven, pour the remaining syrup over the cake. Whip the cream until it forms stiff peaks, adding sugar and a lot of grated coconut (quantities to be adjusted to taste).

    Very good recipe. I didn’t use rum, nor did I make cream. I replaced the vanilla sugar with vanilla extract and added grated coconut. A delight!

    Fabulous! This is the first time I am leaving a comment on a recipe :) So... I made this cake by doubling the quantities and excluding the rum, and baked it in a preheated oven at 180 degrees, in a springform pan, on parchment paper. After an hour, the cake seemed too moist, so I unmolded it, flipped it over, and continued baking for another 10 minutes. Perfect result! I am keeping the recipe!!!

    I followed the cooking instructions, the top was nicely browned but the middle was not cooked.. after a little more cooking, it was excellent :)

    SO GOOD! A delight, I didn't make the whipped cream, the cake is just enough, but really too good, and simple!! Thank you, I will keep the recipe. My suggestion: Just one downside, the pineapple falls to the bottom, maybe coat it in flour to prevent that.

    Response to Benjamin Thank you for trying my recipe, it makes me very happy. My suggestion: An hour to bake a small cake seems crazy to me... in my opinion, your oven was not preheated to 180°.
