Discover this pineapple cake recipe. This simple variation of the pound cake is absolutely not dry, making it a real delight for an afternoon snack.
Preheat the oven to 200°C.
Preparation of the dough Mix the eggs and sugar in a bowl. Add the flour, baking powder, rum, and vanilla sugar.
Melt the butter in the microwave and incorporate it.
Add the topping Add the diced pineapple slices and 4 tablespoons of syrup. Keep the remaining syrup.
Cooking: Bake for 40 minutes in a flexible mold.
Preparation of the cream: Once out of the oven, pour the remaining syrup over the cake. Whip the cream until it forms stiff peaks, adding sugar and a lot of grated coconut (quantities to be adjusted to taste).
