Peanut Butter Cookie Recipe

Ingredients
 115 Unsalted butter at room temperature
 50 Sugar
 90 Brown sugar
 115 Unsweetened peanut butter
 1 Egg
 1 Liquid vanilla
 120 Flour
 1 Yeast
 1 pinch Salt

Preheat the oven to 180°C.

Using a stand mixer with a paddle attachment, beat the butter with the granulated sugar, brown sugar, peanut butter, egg, and liquid vanilla. When the mixture is smooth, gradually add the flour, baking powder, and a pinch of salt. Stop the mixer, scrape the dough off the paddle, and then add 80g of chocolate pieces. Gently fold the chocolate pieces into the dough using a spatula.

Line a baking sheet with parchment paper. Using a tablespoon, scoop out some cookie dough and place it on the sheet. With the back of the spoon, flatten it slightly. Repeat the process until all the dough is used up (you should need about 2 sheets).

Bake for 10 to 12 minutes (the edges of the cookies should be slightly golden. The cookies will be soft when they come out of the oven and will harden as they cool).

To finish, when they come out of the oven, place a few pieces on each cookie, pressing them down slightly, then let the cookies cool on a rack before enjoying.
