Here is the recipe for oysters with sabayon, which will be the star of your Christmas meal. This recipe, made with oysters, cheese, white wine, and eggs, is really easy to make and essential for the holidays.
Open the oysters one by one.
Discard the first water and let rest for a few minutes so that the oysters can release their water again. Collect the second water in a container. Set the oysters aside in a cool place.
In a pan, melt 20 g of butter and add the shallot. Let it sweat for a few minutes.
Add the second oyster water, the dry wine, and let simmer for 2 minutes over low heat. Beat the egg yolks and add to the wine/oyster juice mixture.
Heat everything gently, then add the cheese in small pieces. Allow the mixture to thicken while whisking continuously. Season to taste.
To finish, preheat the oven to broil. Place the oysters on a baking sheet. Spoon the sabayon over each oyster and broil for 1 to 2 minutes.
