You can't think of a festive meal without baked oysters. Discover the original recipe for a sauce that stands out.
Prepare the sauce 48 hours in advance! In a saucepan, pour in the sake and heat it for a few seconds. Then lower the heat and add the soy sauce and citrus juice. Heat for 1 minute and remove from heat. Add the seaweed and let it steep for 2 minutes. Add the washed citrus cut into pieces, along with the bonito, then return to heat and cover. Allow the sauce to cool, then store it in a resealable container.
On the same day, preheat your oven to broil at 240°C.
Open all the oysters and place them in an ovenproof dish on coarse salt so they remain stable.
Heat a pot of water and place a bowl on top. Add the egg yolks and whisk until they become frothy (do not overcook them).
Pour in the sesame oil, whipped cream, and 1 tablespoon of oyster juice.
Pour 1 tablespoon of sauce over each oyster and bake for about 1 minute.
When they start to firm up, stop cooking.
To finish, add 1 tablespoon of sabayon and bake again for less than a minute to allow it to brown, then enjoy immediately.
