Discover this recipe for traditional pasta. Named the best dish in Africa in 2023, this preparation is one of the favorites among Algerians. It is generally prepared on Fridays, for special occasions such as weddings and celebrations, for gatherings, as well as a main dish for breaking the fast during Ramadan.

Ingredients
 400 Rechta (pasta)
 4 Chicken
 1 Onion
 2 Carrot
 1 Chickpea
 Oil
 Salt
 Pepper
 1 Cinnamon
 2 Butter (for the pasta)
 2 Zucchini

Ingredient preparation: Place the noodles in a large container, add a bit of oil, and mix by hand. Put the noodles in a steamer and cook them over steam. Keep an eye on the cooking.

Remove them from the steamer and place in a large container with a knob of butter. Mix with your fingertips to thoroughly incorporate the fat and separate the pasta. Repeat this operation 2 times.

Preparation of the filling: Put oil and butter in a wok. Add the chicken, chopped onion, diced carrots and zucchini, salt, pepper, and cinnamon. Sauté gently.

Simmer Cover with hot water and add the chickpeas. Let simmer for at least 20 minutes. Then place the chicken and vegetables on the noodles. Drizzle with sauce.
