Mix the dry ingredients (flours, sugars, baking powder, and salt) in a large bowl or the bowl of your mixer.
Separate the egg white from the yolk and whisk the egg white until stiff peaks form.
Add the egg yolk and melted butter to the mixture and stir.
Add the milk, then gently fold in the beaten egg whites.
Let rest for at least 1 hour in the refrigerator.
To finish, for cooking, pre-oil your waffle maker. The plates should be well heated before pouring in the batter. Then let it cook for 3 to 4 minutes, depending on the device used.
