Nettle soup is delicious, but if you add wild garlic, it's even better. In fact, this soup, also known as "ditch soup," takes on a whole new flavor.

Ingredients
 1 Wild garlic
 2 Potato
 70 Vegetable broth
 20 Butter
 1 Shallot
 1 Thick cream

Wash the wild garlic leaves. Set aside. Remove the stems from the nettles and wash them thoroughly with a little baking soda.

Peel and chop the shallot. Melt the butter in a large pot. Add the shallots and sauté them over low heat until they have softened. Add the nettle leaves and wild garlic and let cook for about 5 minutes to wilt them. Remove from heat.

To finish, peel and cut the potatoes into pieces. Bring the broth to a boil and cook the potatoes with a little salt for about 20 minutes. When the potatoes are cooked, add the wild garlic and nettles to the potatoes. Blend everything together to obtain a creamy soup and add fresh cream. If the consistency is too thick, add a little water or milk. Check the seasoning and enjoy.
