Mushroom Velouté: the easy recipe

It's a very easy recipe to make. Moreover, you can vary the mushrooms.

Ingredients
 500 Button mushroom
 ½ Onion
 1 Parsley
 1 Chicken broth
 Freshly ground pepper
 1 Fresh cream
 1 Olive oil
 1 Sunflower oil
 1 Butter
Directions

Peel the mushrooms and cut them into quarters. Do not keep the stems.

Blanch the onion in the mixture of oils and butter. Add the mushrooms. Mix well.

Pour the broth. Add pepper. Add parsley.

Simmer for 30 minutes. Cover the pot halfway.

To finish, blend the mushrooms. Add broth to achieve the desired consistency. Add cream to obtain a smooth velouté. Season with salt if necessary.

    Personally, given the ingredients, this is nothing like a smooth soup, especially since I add more mushrooms and broth. I also add 1 or 2 potatoes depending on their size, and a bit of pepper, chili powder, and cumin.

    It’s missing a certain something! A rather easy recipe to make; the longest part is peeling the mushrooms, but I struggled with the mixing... Maybe it needed more cream! My suggestion: For those looking to save time, buy frozen mushrooms!

    Thank you A very good recipe, also nice in small glasses for appetizers with small cubes of pâté. My suggestion: But for more creaminess, replace the liter of water (broth) with 1/4 water and 3/4 milk.

    I only had mushrooms for a third of the recipe, the onion was quite small, and I only had olive oil and good margarine! Lacking fresh cream, I added a bit of milk and a little bit of cream cheese for creaminess! Despite this makeshift effort, it was delicious, but from now on I will try with the ingredients bought at the supermarket.
