For a tasty appetizer, here is a mini pizza with mackerel. Everyone loves pizza, but homemade is even better. You can also make this pizza as a main dish, with a large pizza dough.

 4 large tomatoes
 1 clove of garlic
 1 Onion
 1 Olive oil
 1 sprig of thyme
 60 Mozzarella
 2 cleaned and gutted mackerel
 Oregano
 Salt
 Pepper

Peel the onion and slice it. Peel the clove of garlic and crush it. Wash the sprig of thyme and the tomatoes, and cut them into large cubes. Cut the mozzarella into small cubes.

In a saucepan, heat the oil. Add the chopped onion, the clove of garlic, the pieces of tomatoes, oregano to taste, and the sprig of thyme, then salt. Let it simmer on low heat for about 20 minutes to obtain a tomato compote. Add a little pepper, and adjust the seasoning with salt and oregano if necessary.

Steam the mackerel for a few minutes with salt and pepper. Then, break the mackerel into large flakes.

Preheat the oven to 180°.

Roll out the pizza dough and use a cookie cutter to cut out small circles (or make one large pizza). Spread tomato sauce on the dough base. Top with mackerel, oregano, and mozzarella.

Bake for 10 to 15 minutes, depending on your oven.

To finish, enjoy as an appetizer, starter, or dish.
