Minestrone is an Italian soup made with various vegetables (tomatoes, zucchini…), white beans, potatoes, and pasta. You can prepare this traditional grandmother's recipe with seasonal vegetables all year round. A simple and quick dish to make!
Preparation of the beans The day before, soak the white beans in water.
Cooking the beans On the same day, drain the white beans and cook them in a pot of water for 30 minutes. Drain and set aside.
Preparation of the vegetables Peel the potato and the carrots.
Chop the vegetables (zucchini, carrots, potato, leek) into pieces of 1 cm.
Score the skin of the tomatoes with a cross using a knife. Boil them for 2 minutes. Immerse them in cold water. Peel them. Cut them into pieces.
Peel and chop the garlic.
Cooking the vegetables Sauté all the vegetables (zucchini, carrots, potato, leek) with garlic in olive oil in a pot for 5 minutes.
Simmer Add the white beans, tomatoes, bouquet garni, and 1.5 liters of water. Season with salt and pepper. Let simmer for 40 minutes over low heat, stirring regularly.
Add the pasta Add the macaroni in the last 10 minutes of cooking.
