Recipe from my mother and childhood happiness! Even my little nieces, who don't like milk, ask for it again...
Place the eggs in a mixing bowl and whisk lightly. Add the flour and a pinch of salt. Continue whisking until you achieve a smooth batter.
Bring the milk to a boil in a heavy-bottomed saucepan. When it reaches a boil, reduce the heat and pour the mixture in a thin stream into the simmering milk. Let it simmer for a few moments, stirring slightly.
To finish, serve on plates and add the crystal sugar (1 to 2 tablespoons according to taste).
