This milk chocolate and spread muffin is a true delight. It will be perfect for a snack or dessert, and why not bake it with a child.
Melt the chocolate in a double boiler. Melt the butter.
Preheat the oven to 180°.
Combine the dry ingredients: flour, baking powder, brown sugar, unsweetened cocoa powder, and cocoa nibs. Mix the liquid ingredients: melted butter, milk, melted chocolate, and eggs.
Add the liquid mixture to the dry mixture and mix very quickly. Just 2 or 3 strokes with a wooden spoon, and it's done. Are there lumps remaining? No worries! If you work the batter too much, the muffins will be less fluffy.
Grease a pan and pour in the batter to one-third full. Add the spread in the center, and then pour more muffin batter until three-quarters full.
Finally, bake for 20 minutes, it's ready.
