Remove the cheese from its box and protective wrapping. Cut the cheese in half horizontally. Spread half of the truffle shavings on it. Close the cheese back up.
Place the cheese in a small oven-safe dish. Let it rest for half an hour at room temperature. Make incisions on the top with a knife and drizzle with brandy. Pour the remaining truffle shavings over the cut.
To finish, preheat your oven to 170°C. Bake the cheese for about ten minutes. Serve immediately with bread or steamed potatoes.
