Matlouh is a traditional Algerian bread; it is a puffy and airy flatbread cooked in a pan (but authentic matlouh is cooked in a tagine). This matlouh recipe using a food processor is very simple to make.

Ingredients
 300 Semolina
 200 Flour
 20 Baker's yeast
 1 Salt
 350 Water
 ¼ Oil
 1 Butter

Pour the water and yeast into the bowl and set for 2 minutes at 37°C on speed 2.

Add the semolina, flour, and oil, and knead (using the "Knead" setting) for 5 minutes. Add the butter (if you like orange blossom, add a tablespoon to flavor your bread) and continue kneading for another 5 minutes.

Let the dough rest under a clean cloth for 1 hour.

Divide into 4 pieces. Sprinkle with a little semolina and let rest for another 20 minutes in a cloth.

To finish, cook in a skillet on both sides.
