A delicious cheesecake, to be enjoyed chilled!
Crush the cookies into powder, add the melted butter, and mix until you achieve a uniform dough. Spread and press the cookie dough into the bottom of a greased springform pan, and set aside in the refrigerator.
Preheat the oven to 180°C. In a bowl, whisk the eggs with the sugar until the mixture lightens in color.
Add the ricotta, fresh cheese, crème fraîche, chopped mint leaves, and the juice of the limes, and mix well to obtain a homogeneous mixture. Pour the preparation over the cookie crust. Bake for 50 minutes.
To finish, let the cheesecake cool before unmolding it. At serving time, decorate the cheesecake with thin slices of lime and mint leaves.
