Today I suggest easy and quick muffins to make, and above all, delicious. They are perfect for a snack or a gourmet breakfast. The combination of lemon and poppy seed is a classic in baking.  100 soft butter
 100 Sugar
 2 Egg
 1 lemon, zests, and juice
 200 Flour
 1 Baking powder
 50 Milk

In a mixing bowl, blend the softened butter with the sugar until you achieve a creamy mixture.

Add the eggs one by one, mixing a little between each addition to incorporate them. Then do the same with the juice and zest of lemon.

Add the flour and baking powder. Mix a little at low speed until a smooth texture is achieved.

Add the milk and the poppy seeds and mix for a few more seconds to incorporate them.

Pour the mixture into silicone muffin molds (otherwise, remember to grease them), filling them two-thirds full.
