Preparation of the batter Preheat the oven to 180 °C (thermostat 6). Separate the egg yolks from the whites. Mix the yolks with the sugar, then add the flour, cornstarch, baking powder, and lemon zest. Melt the butter, squeeze the lemon, and warm it slightly. Combine the butter and lemon, and gradually pour it into the mixture while stirring continuously.
Whip the egg whites with the salt and fold them gently into the mixture.
Cooking: Grease the high-sided mold, pour in the batter, bake for 25 minutes, let cool, and sprinkle with powdered sugar.
