Cut the sausage into slices 8mm thick.
Brown them in a pan without adding oil.
Meanwhile, reheat the mashed potatoes.
It should have a fairly thick but smooth consistency.
For the presentation: Place the sausage slices on a plate. Using a scoop, take some of the puree.
Using a knife, remove the excess to obtain a half-sphere which you place on the slices…
To finish, top with hazelnut shavings. Optionally add a few chopped chives for decoration.
