Preheat the oven to 180°C. In a mixing bowl, pour in the 2 whole eggs, the sugars, and the softened butter. Work everything into a smooth paste. Add the rum and the almond flour. Mix well.
Using a cookie cutter, cut the dough to your desired size and place 2 discs on parchment paper. Spread the almond mixture on top, leaving a 1 cm border. Place the bean in the center. Brush the empty edge with the beaten egg yolk. Cover with 2 more discs of dough. Press the edges to seal and crimp them diagonally with the tip of a knife.
To finish, score diamonds on the top of the pastry. Brush the pastry with the remaining beaten egg yolk and bake for 20 to 25 minutes.
