Enjoy this delicious frozen dessert with strawberries. Lighter than sorbet and super quick to make, it will leave your guests speechless at the end of the meal! Without eggs, milk, flour, or cooking, it can be prepared with almost any fruit and lends itself to all kinds of creative decorations, providing plenty of inspiration.

For the base
 100 Almond powder
 100 Grated coconut
 3 Medjool date
 3 Coconut oil
For the mousse
 250 Chopped strawberries (or soft fruits of your choice)
 The juice of a small can of chickpeas (or alternatively, 2 egg whites)
 1 dash Lemon juice
Directions

First, prepare the base by carefully blending the powders with the dates and coconut oil. Once everything is well combined, press this mixture into the bottom of a removable mold, preferably, or a pastry ring.

Put the chickpea juice, sugar, chopped strawberries, and lemon juice into the bowl of your food processor. Whip for at least 10 minutes. To check that the consistency of the mousse is smooth, take a pinch of the mousse and rub it between your fingers: if you feel sugar granules, continue whipping the mixture.

To finish, pour the mousse into the mold, smooth the surface, then place the cake in the freezer for at least 4 hours. When ready to serve, decorate your dessert with fruit, then cut it using a knife dipped in hot water. Serve it with a red fruit coulis.
