Homemade Tahini Recipe

Tahini is a Lebanese sesame cream made from ground sesame seeds, mixed with a little oil, until a smooth paste is achieved. This condiment is widely used in Eastern cuisine (hummus, chicken skewers, sauces, etc.).

 200 Sesame seed
 34 olive oil (or grape seed oil and a little sesame oil)

Toasting Sesame Seeds If you are toasting in a pan, place the sesame seeds in a dry skillet over medium heat and stir regularly with a wooden spoon. First, toast the sesame seeds to give a nutty flavor to the tahini. Then, continue toasting the seeds until they are lightly colored and fragrant, but no more than 5 minutes, as it goes quickly! They also tend to pop... Let them cool completely on a large plate.

If you choose to roast in the oven, preheat the oven to 180°C (350°F) and spread the sesame seeds on a baking sheet. Allow the seeds to roast, stirring once or twice, until they are lightly golden and fragrant, about 5 minutes. Let them cool completely on a large plate.

Preparation of sesame paste Place the sesame seeds in the bowl of your food processor and turn it on to grind the seeds until a crumbly paste is achieved. You can also use a mortar and pestle.

Add 2 tablespoons of oil to the mixer and continue blending for 1 to 2 minutes, scraping the sides if necessary. You should achieve a thick and fairly smooth paste. Add salt if desired. For a smoother tahini, add more oil, 1 to 2 tablespoons at a time, and blend until satisfied.

Storage: Transfer the sesame paste into an airtight container (preferably a glass jar).

To finish, store this paste in the cupboard for a month or more. If the mixture separates, stir the tahini again to bring everything back together.
