 Diced ham or chopped ham
 2 Egg
 2 Egg yolk
 30 Sour cream
 25 Liquid cream
 70 Grated cheese
 Salt

Preheat the oven to between 200 and 210°C (thermostat 6-7). Line a buttered tart pan, or use parchment paper. Prick the pastry and cover it with half of the diced ham and grated cheese.

In a mixing bowl, whisk the eggs, egg yolks, sour cream, and liquid cream. Add the leftover diced ham. Season with salt and pepper.

Pour the egg cream on top.

Finally, sprinkle the quiche with the remaining grated cheese. Bake it for about 30 minutes until the top forms a nice golden and puffed crust. Serve hot or warm.

    If you search for quiche Lorraine, you will find the original recipe; this one is a variant with ham, so whether it's Lorraine or not, it's not the end of the world. However, what is the 15g of butter listed in the ingredients for? And the ham, can we have the amount? Thank you.

    A heresy for Lorraine... Having always been from Lorraine, I was almost shocked to see this recipe. Indeed, the true Lorraine quiche is absolutely not made with diced ham but with diced smoked bacon. Additionally, only thick cream should be used, with the volume equal to the rest of the mixture. Certainly a bit calorie-dense, but what do you want, it's a recipe designed to withstand winter :)

    A heresy for the region... I must say, I had a shock when I saw this recipe: no bacon and liquid cream!! The true recipe is indeed prepared with smoked bacon and only thick cream, which should be the same amount as the rest of the mixture. Caloric, but 100 times better, and traditional!

    Quiche, your recipe I haven't tried it yet, but I think it is more "realistic" than the recipe suggested by others, which recommends 1/2 liter of milk (resulting in a quiche that is too liquid and a soggy crust). My suggestion: One only: please use Emmental instead of Gruyère, it is not the same cheese at all, and does not have the same taste. Gruyère should be reserved for when cheese is needed, and should not be melted on a quiche (see the opinion of the person who does not recommend using cheese).

    No cheese You NEVER put cheese on a quiche lorraine. My suggestion: I replace half of the ham with previously browned bacon.
