Remove the leaves from the cabbage and blanch it. To blanch: in a pot or large saucepan, put a large quantity of water and bring it to a vigorous boil, then add the vegetables.
Place the cabbage leaves in boiling water for 3 to 4 minutes. Keep it at a rolling boil. Drain and place in a bowl under cold water, then drain again.
With the food processor, slice the half cabbage into strips and set aside.
In a pot, add olive oil, the broth cube, and sauté the onion, bacon, and carrots. Then add the cabbage and cook for 5 minutes, adding salt.
Finally, add 1.5 liters of water or more and cook for 10 to 15 minutes. Serve hot.
