This Greek brownie recipe is made by chef Juan Arbelaez.

Ingredients
 180 Butter
 4 Egg
 250 Chocolate
 30 Flour
 10 Baking powder
 40 Sugar
 2 cups Espresso coffee
 Flower of salt
 Olive oil
 60 Almond powder

Preheat the oven to 180°C.

Melt the butter and chocolate in a double boiler.

In a large bowl, blanch the eggs and sugar.

Add the yeast, almond flour, and flour.

Add the chocolate and butter mixture to the other.

Add the espresso and mix everything together.

Butter the bottom of a mold (preferably rectangular) and add the brownie mixture. Bake for 7 minutes.

To finish, place the mold in the center of the table, drizzle some olive oil on top, add a pinch of fleur de sel, and share it generously!
