In a pot, cook your potatoes with the skin on for about 20 minutes. Then, drain the hot water from your pot and add cold water so your potatoes can cool down. Meanwhile, in a pan, sauté your onions, previously sliced thinly. Add your bacon, season with salt and pepper. Once your onions and bacon are golden, add 2 tablespoons of thick cream. Stir and remove your pan from the heat.

Peel your potatoes. Cut them into slices that are neither too thin nor too thick. Arrange them in a baking dish. Spread your onions and bacon over the entire surface of the dish.

Cut your cheese in half lengthwise and then widthwise. Place your four pieces of cheese on your onions and bacon. Put your dish in the oven preheated to 250°C (thermostat 8). As soon as your cheese is melted and slightly golden, your dish is ready.

    Very good except that I forgot to put the fresh cream on the bacon and sautéed onions, so I added it directly to the mixture in the baking dish to cover everything with the cream.
