On parchment paper (and possibly floured), roll out the dough to a thickness of 1 cm. Cut shapes using a cookie cutter or a cardboard template. Carefully place the figures on a baking sheet lined with parchment paper. Brush with egg yolk using a brush. Bake for 15 minutes in the oven at 190°C (thermostat 6). Allow to cool before proceeding to the icing.
To finish, vigorously mix the egg white with the sugar, then beat with a mixer until a firm consistency is achieved. Add the lemon drops. Decorate the figures using a piping bag. Allow to dry before storing them in a box.
