Generous Chocolate Mousse Recipe

A classic dessert, indeed, but how delicious it is!

Ingredients
 200 Baking chocolate
 6 Egg
 50 Butter
 1 Vanilla sugar
 2 Fine sugar
 1 pinch Salt

Separate the egg whites from the yolks and set aside.

In a saucepan, chop the chocolate and butter into pieces. Melt everything in a double boiler. Once the chocolate is melted, remove from heat immediately and add, whisking, the egg yolks and vanilla sugar. Pour this mixture into a large mixing bowl.

Whip the egg whites until stiff peaks form with a pinch of salt. Gradually incorporate the fine sugar in two additions.

Gently fold the beaten egg whites into the chocolate-egg-sugar mixture in several additions. Place immediately in the refrigerator for 3 hours.

To finish, serve the mousse in individual dishes accompanied by small cookies.

    I made this recipe in my restaurant; customers find it light, airy, and really delicious. Tomorrow I'll try again, adding white chocolate chips for extra indulgence!

    Chocolate mousse The mousse is good, but I think there's too much butter; it would be better to melt the chocolate with a little water, and its consistency should be fine. Some chefs add a bit of gelatin to help it hold better. In short, great recipe. My suggestion: excellent recipe.

    homemade mousse I melt the chocolate without the butter. I mix the egg yolks well with the vanilla sugar and the sugar, and I add just a little bit of butter and I add 7 eggs.

    Deadly! A fairly high-calorie recipe indeed, but really excellent. The best chocolate mousse I have ever eaten. Thank you for this great recipe. My suggestion: I tried it with white chocolate... The texture isn't great and the mixture of chocolate with the eggs tends to fall to the bottom.

    Classic Good but not very dietetic... My suggestion: Personally, I have a grandmother's recipe that does not include butter but only baking chocolate, to which I add 1 to 2 tablespoons of water, sugar, vanilla sugar, and 1 teaspoon of orange liqueur or rum.
