Separate the egg whites from the yolks. Mix the yolks with the coconut milk. Add the vanilla extract. Add the sifted flour and baking powder. Whip the egg whites and gently fold in the sugar.
Separate the egg whites into two portions. Mix the first half with the rest of the preparation. Gently fold in the other half of the egg whites.
Heat a pan over low heat. Add a knob of butter and a little water. Use a metal ring to make perfectly round pancakes. Make three layers of batter for one pancake. Cover for three minutes. Add another layer and add a little water to the pan.
Cover for one minute. Flip the pancake and cover for another minute. Repeat the process until there is no batter left.
Preparation of honey syrup: Bring to a boil 500ml of sweet cider and 50g of sugar. The honey syrup with cider is ready!
