Cod with mango, red beans, and coconut, here’s a burst of flavors for the taste buds. A little exotic journey that's very indulgent, just the way I like it.
Sauté the chopped shallots and garlic in coconut oil. Add the coconut cream, tomatoes, spices, and fresh ginger. Season with salt and pepper. Mix and let cook for 2 minutes.
Then add the fish cut into pieces. Heat gently for 5 minutes.
Cut the mango into pieces. Add the mango and red beans and continue cooking for 2 minutes. Serve on plates and sprinkle with coconut powder and fresh coriander.
