Energy Balls with Apricots and Cashews, Vegan

I'm back with my little energy balls that get us ready to tackle a great day! Quick to make and very quickly disappears....

Ingredients
 40 Dried apricot
 30 Cashews
 2 Sprouted seed flour
 1 Coconut oil
 Shredded coconut

In the blender, place all the ingredients except the shredded coconut and blend.

Combine everything, shape into a log, and wrap in plastic wrap.

Place in the fridge to allow everything to harden. Then remove the plastic wrap and cut into equal slices, forming balls with each slice.

Roll them in shredded coconut. Place them in a bowl covered with a silicone lid and keep in the fridge until serving time.

To finish, note: These silicone lids are really perfect, stretchable as desired, they fit your cups, bowls, serving dishes, plates, and containers. They can be used from -40° to +230°, moving from the freezer to the microwave without any issues. They are also dishwasher safe.
