Ingredients
 250 Filo dough
 500 fresh chopped spinach
 1 Onion
 2 cloves Garlic
 200 Feta
 2 Olive oil
 Salt and pepper
 1 Egg (for the glaze)
 1 Melted butter
Directions
1

Preheat your oven to 180°C.

2

In a skillet, heat the olive oil over medium heat. Add the onion and sauté until it is translucent, then add the garlic and cook for one more minute.

3

Add the chopped spinach to the pan and cook until softened and all the water has evaporated. Season with salt and pepper to taste. Let the mixture cool.

4

Once the spinach has cooled, add the crumbled feta cheese and mix well.

5

Unfold the filo dough on a clean, dry surface. Cut it into strips of the desired width for your pastries.

6

Place a spoonful of the spinach and cheese mixture in the center of your sheet and roll to form cigars.

7

Place the boreks on your baking tray lined with parchment paper. Brush them with beaten egg and melted butter.

8

To finish, bake in a preheated oven for about 20 to 25 minutes, or until the boreks are golden and crispy.
