Making homemade caramel? It's not very complicated. This liquid caramel is easy to prepare and doesn't require any cream. It also stores well in your pantry for a long time. It will accompany many of your desserts.

Yields1 Serving
Prep Time15 minsCook Time15 minsTotal Time30 mins
Ingredients
 500 Sugar
 12 Water
 1 White or red vinegar
 250 Water
Directions
1

Caramel Cooking Put sugar, vinegar, and 120 ml of water in a saucepan. Place the saucepan over low heat and let the sugar dissolve gently.

2

After a few minutes, the syrup begins to boil and the bubbles burst increasingly slowly at the surface, then the syrup changes color.

3

When the caramel has turned brown and starts to smoke, pour half a liter of boiling water over it from a distance; the syrup will bubble and splatter (but it won't last long, it just surprises you).

4

Cooling Let the caramel cool completely before pouring it into a bottle.

Amount of water In the ingredients, you indicate 1/4 liter of water, but in the recipe, you add 1/2 liter boiling. Could you clarify the exact amount? I'm eager to try this caramel.

Liquid Caramel I would be tempted to try this recipe, but you do not specify which vinegar to use, alcoholic, balsamic, or something else? Does it really keep for a long time? In the fridge or in the pantry?

What vinegar? I use the vinegar I have on hand, which is red vinegar, but you can use white vinegar.
