Discover this recipe for Easter Eggs on spinach nests and mashed potatoes. A simple and tasty starter for the Easter festivities.

Ingredients
 5 Potato
 500 Cooked spinach
 8 fresh organic eggs
 1 Organic egg
 3 thick whole cream
 150 Milk
 20 Butter
 Lemon juice
 Salt
 Freshly ground pepper

Wash and peel the potatoes. Cut them into large pieces and cook in cold salted water for 15-20 minutes after boiling begins. Drain the potatoes and place them in a bowl. Add the egg, cream, warm milk, and mash with a potato masher. Add the mixture and blend well. Set aside. Season the spinach with a little lemon juice, butter, salt, and freshly ground pepper. Mix well. Set aside.

Preheat the oven to 180°C. Prepare 8 ramekins. You can also prepare your nests directly on a baking sheet lined with parchment paper. Place a generous spoonful of purée to form a nest. Add spinach on top of the purée. Finish with an egg on each nest. Bake for 10 minutes, then serve warm as an appetizer or side dish.
