When temperatures are cool, a soup is greatly appreciated. This one is made with butternut squash, easy and quick to prepare, and will please the whole family.
Peel the squash, remove the seeds, and cut it into large cubes. Peel the shallot and finely slice it.
In a large pot, add the walnut oil. Add the shallot and the diced squash, and let heat for a few minutes. Then add the milk, salt, and let cook until the squash cubes are tender (15-20 minutes). Drain, reserving the warm milk.
Blend the squash and shallot mixture, gradually adding the milk until you achieve the desired texture. Adjust the seasoning with salt, and add pepper and chili powder.
To finish, serve hot.
