Chop the cilantro and mint, making sure to reserve a few nice leaves for presentation.
Prepare the dressing. In a bowl, add the mustard and honey, then mix. Pour in the olive oil, sesame oil, tamari, and squeeze in half of the lemon.
Grate the ginger before adding it to the mixture. Season, add sesame seeds, chopped herbs, and chili pepper. Mix.
Wash and cut the cucumbers in half, then on the diagonal. Add them to the dressing and mix gently.
On a plate, arrange the cucumber salad. Cut the fresh goat cheese into pieces before placing it on the salad.
To finish, sprinkle with sesame seeds, fleur de sel, and decorate with the remaining fresh herbs.
