These coffee bean cookies are quite an illusion.
Sift together the cocoa powder and flour. Set aside. In a bowl or in the bowl of your mixer fitted with the paddle attachment, whisk together the soft butter and powdered sugar. Add the egg yolk and the cooled espresso.
Whisk again. Gently fold in the flour and cocoa using a spatula, then mix. The mixture should be well combined.
Make small pasta balls weighing about 10 to 13 grams and shape them into an oval to resemble coffee beans. Make a notch on top using a wooden skewer.
