Exotic coconut milk pancakes that are a little different! They are very fluffy, and you can really taste the coconut and lime! They are lighter than classic pancakes because coconut milk is thicker than regular milk, so it's mixed with a bit of water and, above all, is lactose-free.
Put the flour and sugar in a mixing bowl and make a well in the center. Add the eggs and mix well with a wooden spoon. Gradually add the water while whisking to avoid lumps. Then add the coconut milk and mix well.
Grate the zest of the limes finely and add it to the dough. Squeeze a lime and add the juice to the dough along with the rum and coconut oil. Let the dough rest for 1 hour.
Lightly grease the pan with a bit of coconut oil. Heat the pan and start making the pancakes.
To finish, serve accompanied by a pineapple and mango compote with lime and/or a coconut milk whipped cream.
