Coconut Flan Recipe with Caramel and Rum

One of my favorite desserts.

Ingredients
 3 Egg
 397 Sweetened condensed milk
 200 Coconut milk
 Semi-skimmed milk
 125 Shredded coconut
 Sugar (caramel)
 Rum (optional)

Make the caramel (or buy it) and place it at the bottom of the cake mold.

In a mixing bowl, combine the 3 eggs and the sweetened condensed milk. Use the can to measure the coconut milk and fill it up with semi-skimmed milk. Add the shredded coconut.

Put the mixture into the mold. Bake for 40 minutes at 180°C (thermostat 6).

To finish, take the flan out of the oven, unmold it, and drizzle with a splash of amber rum. Serve well chilled.

    A real treat! The whole family loves this delicious dessert. Personally, I don’t add caramel or rum; I prefer it simple. It’s very quick to make and requires very few utensils, so there’s little washing up. Just a mixing bowl and a whisk for the mixture. Definitely worth making often!!!

    Great recipe! I really like this recipe because it is not only easy to make but also loved by everyone. I always make it in double quantity. A real success! My suggestion: However, I cook the flan in a water bath.

    Good Good but it's a shame about the coconut/flan separation.
