For the churros
 150 Flour
 150 Water
 30 Butter
 2 pinches Salt
 1 Egg
 1 pinch Sugar
 Frying oil
 Sugar and cinnamon (for the coating)
For the chocolate sauce
 120 Dark chocolate
 100 Heavy cream
 90 Whole milk
 30 Sugar

Prepare the dough. In a saucepan, pour in the water and bring to a boil with the salt and sugar. When the water is boiling, add the flour off the heat and mix using a spatula. The dough should come away easily from the sides of the saucepan.

Incorporate the eggs. Place the dough in a mixer and knead it, then add the egg. If your dough is too stiff, loosen it with a splash of milk.

Prepare the piping bag. Place the dough in a bag with a star tip and knead it to combine. Then let it rest while the oil heats.

Cooking

Fry the churros in a deep fryer or pot at 180 °C and cut your churros with a pair of kitchen scissors. Mix the churros with a slotted spoon to allow them to color evenly. When they are nicely golden, drain them on paper towels.

Coat the churros Roll the churros in sugar and cinnamon.

Prepare the chocolate sauce. In a saucepan, bring the liquid cream, milk, and sugar to a boil. Place the dark chocolate in pieces in a mixing bowl. When the milk and cream mixture boils, pour it over the chocolate. Whisk to emulsify and transfer to a bowl.
