In a pot, pour in a bit of oil and half a spoonful of butter (the butter is optional). Add the piece of meat (lamb, beef, or chicken, according to your preferences). Do not cut the meat into small pieces at the beginning. Let it simmer for 10 minutes.
Add the chopped onion, diced carrots, and zucchini cut into small pieces, and let simmer.
Add the crushed tomatoes, parsley, cilantro, mint, then the spices (pepper, salt, ginger, chili, ras-el-hanout) and mix. Let simmer for 10 minutes.
Add water (¾ of the pot).
To finish, remove the piece of meat and blend the mixture. Cut the meat into pieces and return it to the pot with a handful of chickpeas soaked in water the day before. Add the wheat to the soup. Cover and let cook for another 20 minutes.
