Chocolate and Chestnut Financier Recipe

Ingredients
 100 semi-salted butter
 2 dark chocolate chips
 3 eggs
 50 flour
 100 powdered sugar
 5 dark cocoa powder

Preheat the oven to 180-190°C.

Start by crumbling the chestnuts. Heat the butter until it turns nutty brown. Stop cooking and set aside.

Beat the egg whites in a bowl until they become frothy. In a separate bowl, mix together the sugar, almond flour, regular flour, and cocoa powder.

Incorporate the egg whites into the mixture, stirring to smooth the batter. Add the melted butter and chocolate chips, and mix again.

Place the mixture in the fridge for an hour.

Butter small molds, then distribute the batter inside. Sprinkle pieces of candied chestnuts on top. Bake for 12 to 15 minutes at a medium temperature. Unmold immediately after removing from the oven, and decorate with sugar pearls and gold leaves.

To finish, let cool a little before tasting. Enjoy with a Christmas beer.
